Potatoes are cultivated primarily in three regions in Italy—Campania, Emilia-Romagna, and Abruzzo—but they are one of the most popular contorni throughout Italy and feature prominently in local recipes in every region. Here, potato salad is made with firm-textured new potatoes because they remain intact during boiling.

The vinaigrette is added while the potatoes are still warm so that the potatoes drink up the flavors as they cool. Wine adds a subtle acidity. The salad should
