The Italian version of the heavenly, nut-studded candy torrone (or its diminutive, torroncino) is an ancient sweet that dates back to Imperial Rome. Though it is available year-round in Italy, it remains a classic delicacy for the winter holidays.
The basic recipe of cooked egg white, sugar and/or honey, and nuts may be cooked to a range of textures, from silky soft and chewy to more brittle. It is embellished with a variety of extracts, spices, and liqueurs, depending
