A semifreddo is a dessert based on a mousselike mixture of beaten egg yolk and sugar, whipped cream, and beaten egg white, frozen in a mold. The texture is similar to gelato, but airier and less dense. The whipped cream prevents the dessert from freezing completely, which gives the preparation its name, which means “half-cold.” This version is flavored with Amaretto, chopped chocolate, and granella (an almond-and-hazelnut brittle).
