Ingredients

  • 50 ml rice vinegar (or balsamic vinegar)
  • 10 ml (2 tsp) soy sauce
  • 10 g Muscovado or demerara sugar
  • 3 strips orange rind - fresh or dried
  • 2 cloves

Method

Bring everything to a simmer, cook for 2 minutes, then leave to infuse for an hour before passing through a fine sieve.
