Split the birds down the back and flatten. Set them on a tray and sprinkle with olive oil and dried herbs and leave for at least 30 minutes. Preheat the grill to medium-high. Season the grouse and grill them about 10 minutes breast-side down, turn over, brush with more olive oil and grill a further 8 minutes.
