There is no question that grapes complement game magnificently, particularly Italia grapes, with their lovely muscatel flavour, which are available during most of the Autumn months.


  • 1 hen pheasant
  • 100 g ( oz) clarified butter


Heat 30 g (1 oz) of the butter in an oven-proof sauté pan and brown the pheasant on all sides. Season the pheasant and place breast-side down in the pan. Roast in a preheated oven 190°C/375°F/gas 5 for 45 minutes. Meanwhile whizz half the grapes in a bl
