Pigeon Breast in Filo

Fresh foie gras is not that easy to come by but it does make this a very memorable dish. Chicken livers may be substituted for the foie gras, but the flavour, as you would expect, is not comparable. Filo is paper-thin pastry that comes in packages containing about 12 sheets, measuring 30 cm x 48 cm (12 in x 9 in) each. It is available, usually frozen, in many supermarkets and continental stores. Thaw the filo, in its package, slowly in a refrigerator or in a cool place.
