Squabs-are excellent simply roasted and served with the pan juices or a little madeira sauce.

  • 3 tablespoons clarified butter

Method

Heat the oven to 220°C/425°F/gas 7. Place the clarified butter in roasting pan and, set in the oven until the butter sizzles. Meanwhile wipe the birds dry and season. Place the birds, breast-side down in the hot butter and roast for 10 minutes. Turn the
