  • 2 mallard ducks
  • 1 onion, stuck with 2 cloves and halved

Method

Season the ducks inside and out and stuff with half an onion. Heat half the butter with the oil in a heavy frying pan and brown the ducks on all sides. Remove the ducks and set aside. Add the onions to the pan and sauté for about 15 minutes, stirring, then add the slices of cooking apple and stir a few more minutes. Season well with salt and pepper.
