The centrepiece of the extraordinary meal, in the film Babette’s Feast, based on a story by Isak Dinesen was ‘caille en sarcophage’ - quail stuffed with foie gras and served in a puff pastry nest. It made me long to taste it and this is my attempt to do so. Babette’s version included truffles. You will probably find foie gras luxurious enough.
