  • 2 tablespoons oil
  • 6 tablespoons butter


Season the quail inside and out and truss. Heat the oil and butter in a sauté pan and brown the quail on all sides. This should take about 3-4 minutes. Remove the birds from the pan and pour away the fat. Add the madeira and boil hard until it has reduced to 2 tablespoons. Pour in the stock and bring to a simmer.
