  • 1 onion, chopped
  • 1 stalk of celery, chopped
  • 1 carrot, finely chopped


Heat a few tablespoons of oil in a heavy sauté pan, add all the vegetables except the garlic and stir until they are somewhat softened. Stir in the garlic and cook for another minute or two. Remove the vegetables with a slotted spoon to a casserole. Lightly flour the rabbit pieces, add a bit more oil to the pan and sauté the rabbit until lightly coloured. Add the rabbit to the casserole, tip ou
