If your carp has been fished from the muddy depths of a pond or river it is prudent to soak it in water with added vinegar - about 4 pints of water to 6 tablespoons of vinegar. This should be done after the fish is cleaned and the gall sac at the base of the head removed. Most of the carp one is likely to encounter at the fishmonger will have been farmed to meet the needs of the Chinese and Jewish communities.
