Using a frying pan, sweat about half the shallots in the butter until they have softened. Add the mushrooms, salt, pepper and lemon juice. Sauté the mushrooms until they give off their own moisture, raise the heat and boil most of this away. Scrape into a bowl and mix with the breadcrumbs and cream, half the parsley and more seasoning.
