Grilled Swordfish with Herb Mayonnaise

  • 6 x 200 g (7 oz) swordfish steaks about 2½ cm (1 in) thick
  • 4 tablespoons olive

Method

Mix 1 tablespoon of the herbs with the olive oil and rub over the fish. Leave to marinate for 30 minutes. Mix the remaining herbs and anchovies into the mayonnaise. Preheat the grill. Grill the swordfish for 4-5 minutes on one side. Turn the fish over and grill for 3 minutes, smear a coating of mayonnaise on the fish and grill until the mayonnaise becomes lightly browned.
