Method

Mix together the olive oil, lemon juice, herb, salt and pepper. Cut the fish into good sized cubes and marinate for 15-20 minutes.

Meanwhile grill the peppers until the skins are charred. Peel, seed and cut the flesh into thick strips. Alternate pieces of tomato, pepper, onion if you are using it and fish on skewers. Grill for 8-10 minutes, turning the skewers half-way through the cooki
