Any number of different ingredients can be used for this classic salad, such as artichoke hearts, thin slivers of raw fennel, baby broad beans or indeed any of the baby vegetables now available.
Marinate the tunny steak in the olive oil, basil and lemon juice for a few hours if possible. Season them with salt and pepper. Heat a nonstick pan and cook the fish for about 3 minutes on each side. Remove the fish to a plate to cool, skin if necessary and divide into chunks.
