Grilled polenta is good with all roasted or grilled game birds. It is also delicious fried in butter with a dryish game dish or used as a base for sitting small birds on.
Bring the water to a boil, add salt and pour in the polenta in a slow steady stream, stirring constantly with a wooden spoon. Keep stirring for about 30 minutes, until the polenta has an elastic texture and comes away from the sides of the pan. Spread out on a board or flat surface with a spatula to a thickness of about 2.5 cm (1 inch), leave to cool for at least 20 minutes. Cut into squares. T
