Peel, core and slice the apples. Peel the potato and celeriac, and cut both into thick slices. Cook the apple, celeriac and potato in boiling salted water for about 20 minutes or until tender. Drain, then purée through a vegetable mill or potato ricer. Whisk in the butter and enough cream to make a light fluffy purée. Season with salt and pepper.
