Use top 7.5 cm (3 inches) of the turnip (the rest can go for soup). Remove the hard core and slice thinly. Soak in cold water for 10 minutes, drain and dry well. Deep fry in small batches at 190°C/375°F until crisp. Drain, salt, and keep warm.
