Peel and cut the swedes into equal-sized pieces. Boil in salted water to cover until tender. Drain well, purée, and mix in all but a knob of the butter, the cream, grated nutmeg, salt and pepper.

Peel, core and dice the apples. Place in a small saucepan with the knob of butter, sugar, lemon juice and 6 tablespoons of water. Cover and simmer over low heat until the apple is tender but st
