Endive goes particularly well with game, braised as in this recipe or just sliced and stewed in a little butter or stock.

Ingredients

  • 12 firm tightly closed endive (witloof)
  • unsalted butter
  • juice of half an orange

Method

Butter a flame-proof casserole large enough to hold the endive in two layers. Sprinkle with the orange juice, some salt and 6 tablespoons of water. Cover and simmer for 10 minutes. Uncover and boil until the liquid is reduced to about 3 tablespoons. Cover the endives with cartouche sheet of buttered paper and a lid. Bake in an oven preheated to
