Heat the butter in a large heavy saucepan, add the bacon and lightly brown. Add the onion and stir for a few minutes, then add the cabbage and stir until well coated in the fat. Mix in the vinegar and season with salt and pepper. Add the apples, cover, and simmer over very low heat (using a simmering disc if possible) for about 35 minutes, or until cabbage is tender but still has a bit of bite.
