Excellent with any cold fish dish and makes a change from the usual mayonnaise.


  • 625 g ( lb) tomatoes, skinned, seeded and diced
  • 6 tablespoons fromage frais</


Lightly salt the diced tomatoes and place in a stainless-steel or plastic sieve to drain. Whisk the fromage frais with the cream then add the other ingredients. Fold in the tomatoes, taste for seasoning and refrigerate until needed.
