For those of us who grow our own vegetables, it’s often a job knowing what to do with a glut of courgettes. There’s only so many chutneys and courgette cakes you can make! Here’s an idea for a lovely light lunch, where courgette is enhanced by its friends, garlic and lemon juice. If you want to vary this, you could spread the sourdough with some soft lemony goat’s cheese. Don’t skimp on the toppings as they add wonderful flavour and texture.
