Green garlic is simply immature garlic, with a flavour somewhere between spring onions and mature garlic. It makes a delicious dressing, and this recipe takes me straight back to my childhood as my mother would regularly use green garlic in her recipes.
Scrub the potatoes and cut them into quarters lengthways, ensuring they are all a similar size to allow even cooking. Boil the potatoes in salted water until firm but cooked through, about 15 minutes.
To make the green garlic dressing, simply combine all the ingredients. This will keep in the fridge for several days.
