Whoever invented the mighty traybake deserves a medal, in my humble opinion. What’s not to like about minimal preparation, tossing a load of ingredients into a roasting tin, and pretty much leaving it alone for 45 minutes or so? True to form, I’ve sneaked garlic into both the potatoes and the chicken: the result is absolutely delicious. Serve straight from the oven to the table and let everyone dive in and help themselves.
