This is a delicious and hearty vegetarian dish with a lingering smoky sweetness from the paprika. Beans are an excellent source of fibre, folate, iron, and magnesium, plus they are high in protein which will keep you fuller for longer. The warm beans are finished with a garlicky, oniony oil which they soak up eagerly.
Rinse the beans in a colander, then put them in a large bowl, cover with plenty of cold water and leave them on the counter overnight.
The next day, drain and rinse the beans, then transfer them to a large saucepan, cover with fresh water by a couple of inches and put on a high heat. Add the salt, prepared vegetables, garlic cloves, and herbs.
