I think this has to be my favourite rice dish, bar none. Heady with garlic, sweet from the apricots and unctuous from the ghee, it’s a worthy accompaniment to any number of Middle Eastern dishes, particularly tagines. It also pairs rather well with Indian curries so is a super versatile dish to have in your arsenal.

Ingredients

  • 300 g basmati rice
  • 3 tbsp ghee
  • 2 garlic cloves

Method

  1. Start by washing the rice in a bowl of warm water until the water runs clear – you may need to wash the rice with 3-4 changes of water. Once you have rinsed the rice, put it into a bowl of cold water and leave to soak for 15 minutes. Drain when ready to use.

  2. Melt the ghee in a large pan and when warm, add the thinly sliced garlic and sauté for 1-2 min
