Whoever thought of combining hummus – the food of the gods – with smoky, sweet garlic deserves a medal. Oh, hang on a minute: that would be me! Drizzle this over salad, grilled meats, pan-fried halloumi… the possibilities are endless. Just three little words: this is yummy.
Put all the ingredients except the pine nuts into a food processor and blitz until smooth. Add a little more water if necessary to get the right consistency.
Drizzle the dressing over anything you like and sprinkle with the toasted pine nuts.
