People just love Grilled Haloumi, and its texture goes so well with that of the chickpea salsa. Cut the cheese into fat cubes if you are going to thread them on to skewers for the barbecue; flat strips let the marinade into the cheese more readily.

Ingredients

  • 350 g (12 oz) haloumi cheese
  • harissa, to serve
  • large sli

Method

  1. First make the salsa by mixing all the ingredients together.
  2. Cut the haloumi into 1 cm (½ in) slices or 8 mm (⅜ in) cubes and leave to drain on kitchen paper so it will crisp up better during cooking.
  3. Preheat a griddle or dry, heavy frying pan until very hot and then sear the haloumi slices or cubes until well browned, turning once.
