If you are Lucky enough to get avocados at that really perfect point of ripeness, dice them and make this into a salsa. Otherwise, purée them in a blender or mash them with a fork. Try to find Hass avocados as they seem to ripen more naturally, and deliver a much better flavour and creamy texture. The Mexicans call avocados “cream of the trees”, and Hass can be exactly that.
