This is my mother’s original cheesecake recipe. The filling is delicious quark, a common dairy ingredient in Germany. This recipe uses restraint in the sugar quantity to avoid overpowering the quark. For those who crave sweeter fillings, add more sugar to taste. Another option my mother thought of to bring extra flavor to the cake is stirring raisins into the filling or adding a layer of apricots. As with other cheesecakes, allow sufficient time
