These delicious almond paste cookies are one of my favorites. They are soft and slightly gooey, with a candy-like crunch around the edges. The chocolate-dipped ends make a heavenly finish. Choose one of the two options included in this recipe for the dipping chocolate. The easy dipping chocolate is simpler, and a good place to begin for new bakers. The tempered dipping chocolate requires more steps, but it produces a smoother covering.
