For fancier decoration with piping, double the amount of heavy whipping cream and powdered sugar.; 2 teaspoons vanilla extract, or 2½ teaspoons vanilla sugar, or pulp of ½ of a vanilla bean; 1 (15- or 16-ounce) can mandarin oranges (or from a jar); 6 tablespoons cold water; 2 (7-gram) envelopes ground gelatin (14 grams total); 1 cup heavy whipping cream; 1/16 teaspoon salt; 3 tablespoons pasteurized egg whites, optional (for a lighter, fluffier filling); 4 tablespoons warm water; ½ cup heavy whipping cream; 16 ounces quark (if quark is hard to find, substitute 1½ cups ricotta and ⅔ cup sour cream); Whipped cream and mandarin decoration; ⅓ cup powdered sugar (for dusting); ½ teaspoon cream of tartar (to whip with optional egg whites); ⅛ teaspoon baking powder; ⅔ cup sugar; 9 mandarin slices (from a can or jar)
