This sauce is bright, tart, and sweet. The black currant liqueur is highly recommended. It intensifies the raspberry’s natural flavor. The directions add the liqueur after the sauce is strained in step 2; alternatively, it can be added with the other ingredients in step 1 to give the alcohol extra time to cook out.
