The only ingredient needed to make a tempered chocolate glaze is couverture chocolate. Couverture is made from dark or bittersweet chocolate. It has a higher cocoa butter content but is not necessarily higher in cocoa. Choose couverture from a high-quality brand to help the success of the glaze.
