  • 3 pounds (1.4 kg) green tomatoes (or whatever you have left in your garden, really)
  • 2 garlic cloves, halved<

Method

Have ready 3 or 4 sterilized 1-quart (1-L) glass canning jars and lids (depending on the size of your tomatoes, you may not need them all).

Cut the tomatoes in half, quarters, or slices, depending on the size (look for pieces about 1 inch/2.5 cm thick at the widest) and place them in the sterilized jars, filling to the “shoulders” of the jars. Add half a garlic clove to each jar and dis
