Byrrh is a funky old aperitif—first produced in 1866—with notes of coffee, orange peel, and a bit of quinine’s distinct bitterness. It’s a warmer flavor palate than some other aperitifs, so I like it in this drink with the licorice bite of pastis. It’s a little crazy, but sometimes crazy works.
Fill two tall glasses three-quarters of the way with ice. Divide the Byrrh, Contratto, and pastis evenly between both glasses and stir. Top each glass with crémant and stir, then garnish with the lemon slices and flowers, if using.
