Honfleur is the name of a beautiful medieval port town on the Normandy coast. As you drive up from it into the hills of the Pays d’Auge, the hedgerows are often laced with big elderflower bushes, sureau in French, whose sunny fragrance merges with the grass and orchard blossoms. This drink tries to create a similar effect.
