Though most of Normandy’s flavors are quite homegrown, it’s not uncommon to find some far-flung spices in baked goods, condiments, or snacks, like these nuts. I suspect the seafaring ways of the Normans led to a rich palette of spices to work with. Back home in Seattle, I rely on my own globe-trotting friend, Mehdi Boujrada, to bring back incredible spices from Morocco, including fragrant ras el hanout, the blend of many, many spices, including saffron, rose petals, and cardamom.
