Vadouvan is a masala spice blend with a French accent—lots of shallot—that most likely evolved from the French colonial presence in the region around Pondicherry. It has familiar curry flavors like fenugreek, cumin, and mustard, but a notable roundness, too, that adds depth and aroma to a simple pot of steamed mussels. The resulting ochre broth looks beautiful against the blue-black mussel shells. Make sure to serve with a crackly baguette.
