On one late-spring visit to the Maltby Street Market, I ran into a ham-slicing competition. About five competitors stood under awnings and raced to see who could most skillfully but quickly shave an entire bone-in leg of Spanish jamon serrano. It was hot, and the contestants and the ham slices alike looked overheated.
