  • ¼ lb butter
  • 6–8 egg yolks
  • 1 lb weighted farmer’s cheese
  • ½ glass, or ¼ lb, sugar
  • 1 glass sour cream
  • vanilla


    Beat ¼ lb butter until white. Beat in 6–8 egg yolks and add 1 lb of very fresh, weighted* farmer’s cheese (tvorog), 1 glass fresh sour cream, a little salt, ½ glass or more sugar, and vanilla. Mix thoroughly.

    Prepare short pastry from 1 lb flour, ½ lb butter, ½ glass fine sugar, 1 egg, 1 spoon sour cream, and salt. Add mm or vodka diluted with water, about glass in all, or enough to knead the dough and roll it out. Line the bottom of a wide, shallow pan with this pastry and make a rim of dough. Pour in the prepared mixture and bake in a hot oven for no longer than 20 minutes. To serve, strew with sugar. Some people pour on melted butter.
