Beat 10 hard-boiled egg yolks until smooth, add about ⅜* glass cold, clarified butter, ½glass sugar, the zest from ½ lemon, ¾glass flour, and 1–2 raw eggs. Mix for an hour or more. Place ½sheet of buttered paper on a baking sheet, spread the dough on top, and set in the oven after baking bread. Glaze and decorate, or simply cover with jam.
