1650 Mazurka from boiled egg yolks

  • 10egg yolks
  • ½ glass clarified butter*
  • ½ glass sugar
  • zest from 1 lemon
  • ¾ glass flour
  • ingredients for icing and other decorations, or 1–1½ glasses jam


Beat 10 hard-boiled egg yolks until smooth, add about ⅜* glass cold, clarified butter, ½ glass sugar, the zest from ½ lemon, ¾ glass flour, and 1–2 raw eggs. Mix for an hour or more. Place ½ sheet of buttered paper on a baking sheet, spread the dough on top, and set in the oven after baking bread. Glaze and decorate, or simply cover with jam.
