Bake 5 large apples, rub through a fine sieve, and add 1½ glasses, or ¾ lb, fine sugar and 1 egg white. Surround the pan with ice or snow and stir for at least 2 hours in a saucepan until the mixture whitens and thickens sufficiently for a spoon to stand upright. Then spoon out small heaps onto paper or fill small paper cases 2 vershok long and almost ¾ vershok wide and high. Dry out the kisses in a low oven, then remove the papers, arrange the cookies on a platter, and keep them in a warm oven until served. Yields 40 pieces.
