Method

(For 6 persons). Pour boiling water over 1 teaspoon yellow tea* and let it brew. Squeeze the juice from 6 oranges. Add to each teacup 1 piece sugar, 1 teaspoon maraschino, 2 teaspoons white rum and the juice of an orange. Fill up [the cup] with tea.

*Yellow tea is a Chinese tea prepared from the youngest shoots of the plant, especially from the buds of the tea leaves. It is an exceptionally fine, delicate tea with an elusive aroma. Yellow Chinese tea is almost unknown in Europe; not only is it very expensive, but in the past the Chinese prohibited its export since the use of yellow tea was reserved for high officials at the Imperial Court and for religious ceremonies.
