Cheese Puffs

As is true with so many French dishes, there is considerable argument about where gougères were first invented. They are usually thought of as Burgundian, and they do make a lovely hors d’oeuvre to accompany wine. But as Anne Willan points out in her book French regional Cooking, the town of Sens, which is south of Paris on the way to Burgundy, claims gougères as its own.
