If you make a batch of cheese and get excited about the process, you may want to order special starters (see Sources). These starters contain various bacteria in carefully controlled amounts, allowing you to come up with different effects. If you’re a vegetarian, you can also use vegetable “rennet” that contains no animal products. Some starters, especially designed for making fromage frais, contain combinations of active bacteria and rennet.
