The first time I tasted socca, as a mid-morning snack, I wasn’t terribly impressed, my palate jaded as it is by buttery goodies like croissants, Danish pastry, and, well, doughnuts. It wasn’t until I tasted socca in Nice and read Robert Carrier’s book Feasts of Provence, in which he suggests serving socca as a starchy accompaniment to seafood stews, that I realized they were worth the effort.
